Milkfish, also called Bangus in the Philippines, is found in the warm parts of the Indian and Pacific Oceans. Its firm texture and mild sweet taste make it great for grilling, frying or even steamed. Essential to the cuisine of Southeast Asia and the Pacific Islands, including Hawaii, in the recent years this exotic fish has become more and more popular around the world. Milkfish is often referred as the national fish of the Philippines.
